Chestnut shibukawa-ni - Saturday, 13 Oct. 2018

I'm cooking chestnut shibukawa-ni. I'm writing this article during cooking, because cooking it needs long time.

I don't know what shibukawa-ni is called in English. I guess it is a special word for chestnut, in other works, shibukawa-ni is not used for other ingredients. Because shibukawa is a part of chestnut.

Chestnut has three peels.

Firstly, it has thorns. It is called "イガ" (iga) in Japanese.

Secondly, it has hard peel in the thorns. It is called "鬼皮" (onikawa) in Japanese. it means "demon peel".

Finally, it has soft peel in onikawa. It is called "渋皮" (shibukawa) in Japanese.

Shibukawa-ni uses chestnut with shibukawa. It is simmered chestnut with sugar. It is sweet.

I'd like to bake chestnut bread that includes shibukawa-ni if I success to cook it.
